Cheddar Buttermilk Biscuits
Mmm these were soo yummy! They are super easy & quick to put together plus they darn near melt in your mouth! I served them up with steak and baked potatoes!
Here is what you’ll need:
2 cups flour
2 TBLS sugar
4 tsp baking powder
1/2 tsp salt
1/2 cold butter cubed
1 cup shredded cheese
3/4 cup buttermilk
Pre Heat Oven to 425 degrees
In a bowl add 2 cups flour, 2 TBLS sugar, 4 tsp baking powder, 1/2 tsp salt and mix.
Add 1/2 cup cold cubed butter and cut in
Should resemble coarse crumbs
Add 1 cup shredded cheese and mix in
Add 3/4 cup buttermilk and mix till just moistened
Plop onto a floured surface… Kneed about 10 minutes
flatten out to about 3/4 to 1 inch thick
I formed a circle and cut it like a pizza… you can use a biscuit cutter and make round ones… But I just get less wasted dough this way!
Place on a greased pan and bake at 425 degrees for about 15 minutes
Pull them out and brush top with butter… let cool for about 5 minutes before serving
I was reading your 20 minute biscuit recipe (yum!) just before this one. That one says to knead 10-15 (or 15-20, I can’t remember now) TIMES. This recipe says 10 MINUTES. Is there really that big of a difference in how they’re prepared? Or is this recipe supposed to say 10 times? Either way, both recipes look amazing!
Hi Jane… the 20 min biscuit is only about 10 times… you don’t want to over do that one… This one needs the 10 minute knead time to pull everything together… I’m not sure but I think its because of the buttermilk… I’ve actually made these ones before and forgot to knead it 10 mins and only did it a few times like the 20 min. biscuits (I make those ones all the time) and the dough was falling apart and I was having a hard time shaping it… I went and checked the recipe again and realized I had not kneaded long enough. So not sure why there is such a difference I’m thinking buttermilk and the cheddar cheese and having to pull all the ingredients together! You have to try the 20 min biscuits though… So fast and so yummy!!! These ones are good too… just take a little extra time… I call it love 😉

I tried making these ones with oil, instead of butter, and used sharp cheddar (a generous cup) and they are great!!
