Kid Friendly Country Scramble
We love breakfast around here… especially for dinner! I’ve been making this scramble for years and the kids eat it up… its an easy way to get some protein in them past all the pancakes they are gobbling up!
Here is what you’ll need:
1/2 pound breakfast pork sausage
1 large potato
4 eggs
shredded cheese
green onion
salt
pepper
Over medium heat put your breakfast sausage in the panbreak it down as it begins to cookWhile your sausage is cooking clean your large potatoand dice it upWhen your sausage is done put it in a separate bowl and set asideIn the same skillet with the grease from the sausage, add your potatoes, salt & pepperstir them around and cover check on them every couple minutesin a small skillet over medium heat scramble your eggsOnce your potatoes are done add the sausage and eggs to themadd some chopped green onionadd your shredded cheese and cover… remove from heat and allow a minute for the cheese to meltNow you have your Kid Friendly Country Scramble Enjoy!
If your looking for a little kick add some crushed red pepper when you add the salt & pepper and serve them on a warmed flour tortilla top it with salsa and roll it up into a breakfast burrito!
