Herb Roasted Whole Chicken
Good Sunday morning to everyone! Sorry I’ve been a little absent this week and haven’t been able to get up new recipes! I’ve been busy at work selling houses… But I can’t complain… I love my job! I knew I was gonna be swamped at work this week so on Tuesday I made this Herb Roast Whole Chicken so I would have lots of meat to make a couple quick meals for the rest of the week! I know I’ve said this before but I love making whole chickens because of the amount of meat you get from them… it cuts down on cost and I can usually pull 3 meals together from them!
I know a whole chicken can scare people… not naming names… but my Sister-In-Law is one of them 😉 I still giggle when I think back to a day at her house… She was making whole chicken on the BBQ sitting on a can of beer… when we were prepping the chicken she asked me if we needed to use soap to clean it off! It was a pretty funny and I will probably never let her live it down 😉 We continued on to prepping the chicken and tossed in on the BBQ… I remember asking her maybe we should put a pan under it since it was a gas BBQ and we rubbed it down with Olive Oil… Oh no she said its all good! Well about 20 minutes later she went to check on it and it was fully engulfed in flames! I love her to death… but I had to laugh at her that day! The chicken was still good and she was lucky to catch it when she did… But it still gives me the giggles when I think back to it!
Try it this recipe… the chicken turns out juicy and moist and you have leftovers to pull together some extra meals!
Here is what you’ll need:
1 whole chicken
fresh herbs… I used Rosemary, Thyme, and Sage
1/3 cup softened butter
salt and pepper
1 small lemon
Strip the rosemary
Chop it up
zest the lemon and stuff the halves in the cavity
bundle your herbs together and stuff them in the cavity of the chicken
Put the softened butter in a bowl and add your chopped herbs, salt, pepper and lemon zest
mix well
Plop it on your chicken
Rub it in
Bake at 450 for 1 hour check temp may need additional 15 mins
Let the chicken rest for about 15 minutes before cutting into it!
