The kids and I made these last night to have a “treat” for St. Patty’s Day… after dinner of course 😉 I hope everyone has a great day today…

St. Patty’s Day Cupcakes
Chocolate Cupcakes:
2 2/3 cups flour, 1/2 tsp baking soda, 1 TBLS + 1 tsp baking powder, 1 1/2 cups baking cocoa, 1/4 tsp salt, 1/2 cup softened butter, 3 cups sugar, 4 eggs, 1 1/2 tsp vanilla, 2 cups milk
Filling:
8 0z softened cream cheese, 1/3 cup sugar, 1 egg, 1 cup mini chocolate chips, green food coloring
Butter Cream Frosting:
1 cups softened butter, 4 cups sifted powdered sugar, 2 tsp vanilla, 2-3 TBLS heavy cream or milk, green food coloring
Pre-Heat the oven to 350 degrees
