Caramel Apple Sweet Rolls
Caramel Apple Sweet Rolls…
Every part of that title makes my hungry! These rolls melt in your mouth… Although they may be a task to take on… They are worth every minute of it! I like to make the dough and filling up the day before … That way it doesn’t feel like I’m in the kitchen all day working on these! They are a special treat to have though… I love making them up for family gatherings!
There is 3 separate recipes to pull together … Here they are:
Dough for the Rolls:
4 Cups Milk (I used whole), 1 cup canola or vegetable oil, 1 cup sugar, 9 cups flour (divided), 5 tsp yeast, 1 1/2 tsp baking powder, 1 tsp baking soda, 1 TBLS salt
Apple Filling:
8 Granny Smith Apples, 2 sticks butter (1 cup), 2 cups brown sugar, 1 cup heavy cream, 2 tsp cinnamon
Caramel Icing:
2 sticks butter (1 cup), 2 cups brown sugar, 1 cup heavy cream, 4 cups sifted powdered sugar, 1/2 tsp salt
In a large pot combine 4 cups milk, 1 cup oil and 1 cup sugar. Bring to almost a boil and remove from heat. Let it cool for about an hour.Sprinkle the yeast over the top and let set for 5 minutesAdd 8 cups of flour and mixCover and let rise for about 1 hourAdd the last cup of flour, 1 1/2 tsp baking powder, 1 tsp baking soda, and 1 TBLS saltMix it together… This can get a ‘lil’ messy… I like to just get down and dirty and use my hands at this pointYour dough is ready! At this point you can continue on or you can store your dough in the fridge for up to 3 days… just make sure to check on it now and then and punch it down… or you might end up with a monster taking over the inside of the fridge… we don’t want that!Cut your apples in 4, cut out the cores and dice them upIts a lot of apples! 🙂Over medium heat cook your apples downThey are done when they start to turn yellow… Put them back in a bowlIn the same pan you cooked your apples in melt 1 cup butterAdd 2 cups brown sugarKeep mixing it until the sugar is dissolvedIt should look like thisAdd 1 cup heavy cream and continue stirringAfter 2 minutes remove from heatAdd the apples and sprinkle with 2 tsp cinnamonMix them together and let cool for at least 20-30 minsPull out your dough and cut in halfRoll out your doughAdd 1/2 of your fillingSpread it outstart at one end and roll it upPull up the other side and pinch your ends togetherCut about 1 inch thickline the bottom of your pans with melted butter and fill the pans with the rolls… they usually fit 7-8 rolls per pan
Let set for about 20 minutes and then bake at 375 degrees for 20-25 minutes When your pans go in the oven is when your want to make your frosting!Melt 1 cup butterAdd 2 cups brown sugarKeep mixing it until the sugar is dissolvedIt should look like thisAdd 1 cup heavy cream and continue stirringAfter 2 minutes remove from heatAdd 4 cups sifted powdered sugar and mix wellAfter your rolls are done baking let cool for about 10 minutesDrizzle with your Caramel FrostingI hope you enjoy them as much as we do!
