Personal Apple Pies
My youngest son filled up a big bag of little granny smith apples at the store the other day… A little more than we would normally eat around here! They were on sale and he is so cute with that innocent smile… so I let him toss them in the cart and off we went! Well I knew the moment they hit the cart I would be baking Apple Pie in my near future! Instead of the traditional Apple Pie I decided to change it up and put together these Person Apple Pies… One for each of us!
Make up your Pie Crust and break it down to smaller pieces… I made 8 out of one recipe… only ended up using 6.Flatten them out and stick in the freezer for 20 minutes… Or about the time your done doing the apples!Peel, cut and dice up your applesStick them in a bowl and hit with some lemon juiceAdd flour, both sugars, salt and cinnamon
Scoop about 3/4 to 1 cup of the filling onto your rolled out Pie CrustPull up a side and tuck over laying on top and repeat as you go aroundYou should end leaving a small hole at the top… Dab a small piece of butter in the hole… Repeat to finish up the rest of themScramble and egg and add 1 tsp milk to make a wash
Brush egg wash on and sprinkle lightly with sugarPlace in a 375 degree oven for 30 minutesLet cool for 10-15 minutes and move to serving plate
