Fried Zucchini

I love zucchini… I grow it out in my garden all summer long and never get tired of it!  In the winter though I feel like I have withdrawals… So every once in a while I’ll pick some up at the store and whip us up something zucchini!  Fried zucchini is an easy side to add to any dinner… Try it out and let me know what you think!

Here is what you’ll need:

1 zucchini

1 to 2 eggs (depending on how big your zucchini is)

bread crumbs ( I used Italian bread crumbs)

1-2 TBLS flour

Olive oil for frying 

Clean your zucchini and chop of the ends... Slice to your desired length... Then slice in half turn and in half again so you have 4 pieces per chunk.

Set yourself up a station... Flour on a plate, eggs scrambled in a bowl, bread crumbs in a bowl and plate for the breaded zucchini.

Then in the eggs and bread crumbs... I'm not gonna lie... this can get a little bit messy!  :-)

Fry your zucchini in olive oil of medium heat till it browns.... rolls it so each side gets cooks evenly

Place on plate with paper plate... let cool a few minutes and serve!   Or if your my husband... eat it right when it comes out and burn your tongue!  He just couldn't wait!
