Crock Pot Cashew Chicken

Chicken… it’s the most often used meat in our household so I’m always looking for new recipes to try with it!  I found this recipe on another blog www.favfamilyrecipes.com… there was tons of comments on the recipe… and after reading through most of them I decided this was the next recipe to try!

I put my own little spin on it by stir-frying up some veggies at the end and tossing them in and then serving it over a bed of rice!  I also doubled the sauce recipe from the original post… because of some of the comments left on her page… and because I’d rather be heavy on the sauce for this type of recipe than not enough!

I’d have to say for a Crock-Pot recipe there was a few extra steps involved then just tossing everything in and turning it on… I also think this can completely be done just on the stove top and not using a Crock-Pot at all… but it is nice to have it do its thing and not have to be in constant watch over it!

Pinterest Crock Pot Cashew ChickenWhat you’ll need:

3 chicken breast cut down to good size chunks

1/2 cup flour

1 tsp pepper

2 TBLS oil

Sauce

1/2 cup soy sauce (I always use low sodium soy sauce)

4 TBLS rice vinegar

4 TBLS ketchup

2 TBLS brown sugar

1 TBLS minced garlic

1 tsp chopped or grated fresh ginger

1/2 tsp red pepper flakes

1 cup cashews (unsalted preferably)

Optional

Zucchini and Carrots for stir frying

Green Onion for topping
