You could say these are not totally homemade… I bought the seasoning pack… But I made them at home! You decide!?! I make these for the family probably once to twice a month…. It’s always a great meal to make up and freeze and have for a back up! I’ve been know to double up the recipe when I’m making them so I can do just that!
Here is what you’ll need:
McCormick s Enchilada seasoning pack
8 oz. can Tomato sauce
1 1/2 cups Water
1-2 boiled shredded Chicken breast
Corn tortillas
shredded Cheese
little oil for frying (optional)
Oven temp 350 degrees
Easy enough right! Doesn’t take much for these… Just some love from the cook to put them together!!

Bring to a boil

This is OPTIONAL you can just heat up the tortilla in the microwave or stove top… but if you want them more “restaurant” style try this…

Really just about 30 seconds on both sides!


Strain the chicken and let the sauce collect in the cake pan below! Put the chicken in a separate bowl



Continue to repeat this step till all your tortilla are made up!



Let cool 5 minutes before serving!
