Twice Baked Potato

I don’t know about you???  But I can eat almost anything Potato!  Twice Baked Potatoes are at the top of my Potato list!!!  The thing I love that most about these isn’t that it’s about the cheapest side you can make… but that it never really needs to be the same… You just work with what you have in the fridge and/or cupboards!  Try it out and get creative…

Make your Twice Baked Potato yours!

Here’s what I was working with:

2 Potatoes

lil Oil for rubbing

Salt

Pepper

Sour Cream

Butter

Bacon

Shredded Cheese

Onion and Chive spices

Outrageously Garlic spice

Wash your Potatoes

Rub them down with Oil and Salt Bake 375 degrees for about 45 minutes...  Really depending on the size of your potato... You want them to just be soft when you give them a squeeze... but not super soft like a true baked potato!

Cook up your bacon while the potatoes are baking... If you choose to add bacon... We love bacon around here!

Once your potatoes are done and cooled down so you can hold them... Slice them in half!

Scoop out the guts and place them in a bowl... I like to leave a good surrounding in the potato so it helps hold its shape

In your bowl add some butter and sour cream and mix it together

Add whatever spices or fresh ingredients you'd like... I love adding chives or a lil garlic... I was out of both fresh so I added what I had in the spice cabinet!

Load up your shells with your mix

Top with shredded cheese, bacon and green onion if you have it... I didn't have it :-(

Bake at 350-375 for about 20 minutes Enjoy!!  I know we did!!
