Strawberry Shortcake Cake

This is such a super yummy cake and guess what?!   None of it came from a box or pre-packaged wrap… its all real & fresh ingredients! (the way it should be)

Here is what you are going to need:

Oven temp 350

Cake: 
1/2 cup + 1 tbls butter softened  (I always keep a brick out on the counter to have on hand!)
1 1/2 cups sugar
3 eggs
1/2 cup (room temp) sour cream
1 tsp vanilla 
1 1/2 cups flour 
3 tbls cornstarch
1/2 tsp salt
1 tsp baking soda

Strawberries:
1 pound or a lil more  (I started with 2 pounds… but by the time I was done cutting and cleaning them the kids had eaten about 1/2 of them!)

Cream Cheese Frosting:
8 ounce pack of room temp cream cheese
1 cup butter room temp  (you see why I keep a brick always out… we are not afraid of butter around here!)
1 1/2 pounds powdered sugar (sifted)
1 tsp vanilla
1/4 tsp salt (if you used unsalted butter) I didn’t!

Cake: Beat butter & sugar til fluffy, add your eggs one at a time (mixing in-between) add the sour cream and vanilla and give it a good mix to stir it altogether!

(I'm a lil anal and put it in one of my big measuring bowls... it was about 4 1/2 cups batter)

place in 2 greased pans So about 2 1/4 cups in each pan  Bake for about 25 mins in preheated 350 oven... or until nice and golden!

 Let them cool completely! I'm serious too! or you'll have yourself a hot mess when putting it all together!

Clean and cut your strawberries in half and then mash them up... you can use a potato masher or I used my meat masher (cause I hate my potato masher... I need a new one)

sprinkle the sugar over them and mix... now set aside and let them get all juicy and yummy till you need them next!!

Cream Cheese Frosting... Put all the ingredients in the mixer and turn that baby on! Mix it till it looks good! (it already tastes good... no worries there)

slice the top of your cakes of so all that super yummy strawberry juice saturated the cake!

and put 1/2 of your strawberries on
and put 1/2 of your strawberries on
no top it with some of that frosting!
now top it with some of that frosting!
plop the second cake on top and repeat the last few steps!

finish it off with the remaining frosting!

and feed it to your family... I put mine in the middle of the table while we were eating dinner... its a great reminder to the kiddos to eat all their dinner!!

Mmm... it was sooo good!  Just the Cake alone is good... but smoothered in strawberries and frosting... No Complaints!

  1. I think the icing is too much, real whipped cream is much better on strawberry shortcake, just my opinion Sandy
