I know we are in the dead of winter and I can’t go pick fresh blueberries to make some yummy muffins… But this is the next best thing! I like to keep a big bag of frozen blueberries in the freezer at all times for just this recipe…
Frozen Blueberry Muffins
Ingredients:
- 1 Cup butter room temp
- 2 Cups sugar
- 4 Eggs
- 1 Cup milk
- 2 tsp. vanilla
- 4 Cups flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2 Cups frozen blueberries
Steps:
- Pre-Heat oven to 375 degrees
- Mix butter and sugar together
- Add eggs and vanilla mix
- Add milk and mix
- In a separate bowl mix your remaining dry ingredients
- Add dry to wet and mix
- Add blueberries and fold in
- Fill 2/3 full in a well greased muffin pan
- Bake at 375 for 20 minutes
- Let set in pan for about 5 mins then pull out to cool
