Frozen Blueberry Muffins

I know we are in the dead of winter and I can’t go pick fresh blueberries to make some yummy muffins… But this is the next best thing!  I like to keep a big bag of frozen blueberries in the freezer at all times for just this recipe…

Frozen Blueberry Muffins

  • Servings: about 12

Ingredients:

  • 1 Cup butter room temp
  • 2 Cups sugar
  • 4 Eggs
  • 1 Cup milk
  • 2 tsp. vanilla
  • 4 Cups flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 Cups frozen blueberries

Steps:

  1. Pre-Heat oven to 375 degrees
  2. Mix butter and sugar together
  3. Add eggs and vanilla mix
  4. Add milk and mix
  5. In a separate bowl mix your remaining dry ingredients
  6. Add dry to wet and mix
  7. Add blueberries and fold in
  8. Fill 2/3 full in a well greased muffin pan
  9. Bake at 375 for 20 minutes
  10. Let set in pan for about 5 mins then pull out to cool
