Cheap Chicken Tacos

Ingredients

  • 1-2 chicken breasts I buy those big bags of frozen chicken breast at Costco $15 for about 20 breasts give or take
  • taco seasoning I buy mine in bulk pennies on the dollar compared to picking up one pack at a time
  • water can't get much cheaper unless your using bottled water
  • Shredded Cheese
  • Lettuce
  • Sour Cream
  • Avocados optional... we love guacamole around here... so I always seem to have a couple sitting on the counter
  • Salt, Pepper, Crushed Red Pepper
  • Corn Tortillas I buy these from Costco too... Huge double pack for under $4

Method

  1. Boil your chicken and let them cool... Sometimes I do this in the morning while I'm getting the kids ready for school... and toss it in the fridge till I'm ready to start cooking dinner!
  2. Simply pull apart your chicken till its all shredded
  3. Add your taco seasoning
  4. And some water... enough to cover the bottom of the pan .... I think I put a lil over 1 cup in
  5. Bring to boil
  6. Cover and cook till water is gone
  7. We like to fry up our corn tortillas ... you don't have to ... you can use flour if your heart desires!
  8. If you are frying yours... cook over medium heat quickly on both sides ... takes about two minutes total
  9. Let them cool on some paper towels and shape
  10. If you want the guac and you have an avocado or two scoop them out and into a bowl
  11. Smash them up
  12. Add what you have in the cupboard... I had Salt, Pepper and Crush Red Pepper
  13. I also had a lil pico de gallo left over from take out the other night... So I tossed it in!
  14. Shred your cheese, cut up your lettuce, pull out the sour cream and salsa and serve up!!
