Rhubarb Apple Cake

I grow our own Rhubarb… and this year it seems to be a little early… kinda caught me off guard 😉  But what’s a girl to do when things are growing out in the garden??  She bakes with them!!  I bake with my Rhubarb all summer long into fall and I usually like to combine some other type of fruit with my recipes!  I had apples on hand so I thought I’d start off with some of my Rhubarb Apple Cake!  I love this cake… it kinda reminds me more of a coffee cake (minus the coffee) and is great for breakfast… or an evening dessert!  Try topping it with some fresh whipped cream or a big ole scoop of vanilla ice cream!!

Pinterest PicWhat you’ll need:

  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/2 cup butter
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 cup sour cream
  • 1 tsp vanilla
  • 3 apples cored and chopped (I left the peel on… because why not?!)
  • 2 cups sliced and chopped rhubarb
  • 1-2 TBLS sugar
  • Topping (optional… I like the extra crunch)
  • 1 cup brown sugar
  • 1/2 cup flour
  • 2 cups oats
  • 1/3 cup softened butter
  • 1 tsp cinnamon

For the topping … Totally optional!!  I like the added “crunch” to my cake 😀

I hope you enjoy this recipe as much as we do!!  Please feel free to SHARE with your family and friends!!
