I grow our own Rhubarb… and this year it seems to be a little early… kinda caught me off guard 😉 But what’s a girl to do when things are growing out in the garden?? She bakes with them!! I bake with my Rhubarb all summer long into fall and I usually like to combine some other type of fruit with my recipes! I had apples on hand so I thought I’d start off with some of my Rhubarb Apple Cake! I love this cake… it kinda reminds me more of a coffee cake (minus the coffee) and is great for breakfast… or an evening dessert! Try topping it with some fresh whipped cream or a big ole scoop of vanilla ice cream!!
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ginger
- 1/2 cup butter
- 1 1/2 cups brown sugar
- 1 egg
- 1 cup sour cream
- 1 tsp vanilla
- 3 apples cored and chopped (I left the peel on… because why not?!)
- 2 cups sliced and chopped rhubarb
- 1-2 TBLS sugar
- Topping (optional… I like the extra crunch)
- 1 cup brown sugar
- 1/2 cup flour
- 2 cups oats
- 1/3 cup softened butter
- 1 tsp cinnamon
For the topping … Totally optional!! I like the added “crunch” to my cake 😀
